  3. Heat a baking tray in the oven at 200 C. Add a good few glugs of olive oil, then add your chips. Season with pepper and roast until crispy, turning one or twice during cooking. Mine took a good 45 minutes.
  4. Season with salt and serve immediately.

If a lot of bubbles form, the oil is hot enough. Place the chips carefully into the oil. Spread the cut celeriac chips out over a sheet of baking parchment. Sprinkle over the garlic, rosemary, and black pepper. Cut the celeriac into thumb-thick slices and then into fat chips.
