Chicken thighs will work great too, just cook a little longer. Olive oil: Vegetable oil can be used here as well. Honey: If you don't have this you can use more brown sugar. Heat the oil in a non-stick pan over a medium heat.
Steps to make Chicken teriyaki:
- Heat cooking oil in a large pan over medium heat.
- Stir fry chicken until lightly browned and crisp.
- In a small bowl whisk together the soy sauce, sugar, Sake/vinegar and Mirin to combine. Set aside.
- Add the garlic to the same pan and saute until lightly fragrant (about 30 seconds).
- Pour in the sauce and allow to cook, while stirring, until the sauce thickens into a beautiful shiny glaze (about 2-3 minutes).
- Meanwhile slice the chicken and put on the top or steamed rice, pour the sauce springkle with the sesame seeds and lastly with spring onion.

Prick the chicken: In Japan, bone-less, skin-on c hicken thighs are a preferred choice because they don't dry out quickly. We almost always use skin-on because the skin provides a safety layer between chicken flesh and a hot pan, and as a result, you get moist and juicy meat every time. Mix all marinade ingredients in shallow dish. When the oil is hot, brown the chicken thighs well on both sides and set them to the side. Add the remaining ingredients to the pot and whisk together making sure to scrape the bottom well.
