I decided to use the amaranth flour that was included in the Nespresso package to make cinnamon rolls, and then drizzle them with a glaze made with Fortissio. This was the first time I have ever used amaranth flour (or any kind of amaranth!). The scent of the flour is similar to quinoa, sort of nutty.

- Wash and clean the amaranth leaves.
- In a bowl add gram flour, red chilli powder, cumin powder, coriander powder and salt as per taste. Mix all the ingredients together and add water in the mixture.
- Mix it well to form a smooth paste having a consistency slightly thicker than a pancake batter.
- Place first amaranths leave over a flat surface upside down. Spread the batter evenly on the leaf with your finger such that it covers an entire surface area. Then place another leaf on the top of first one and then apply the batter again. Repeat it upto 3 leaves.
- Roll the leaves up to 2 folds. Shallow fry the roll over a pan until brown.
