- Get 1 cup Moong Dal

- Prepare 2cup Jaggery or Jaggery Syrup
- Prepare 3 tbsp + 1 tsp Ghee (for roasting cashews,raisins)
- Prepare 1 tsp Cardamom powder
- Prepare 10 Cashews broken
- Take 15 Raisins

- Soak jaggery in warm water, crush it well. Then heat it up until it is slightly thick (no string consistency needs to be checked).Strain and keep aside.
- Dry roast the millets along with moong dal till slightly golden.Then rinse it well and cook it with enough water till it's soft.
- It should be mashable,Set aside fry ghee cashews and raisins till golden.
- Now add the jaggery syrup or Jaggery and mix well.Let it boil for 2 mins so that jaggery gets nicely blended with the it.
- Now add milk and cook for 3mins.Finally add ghee,give a quick mix and garnish with ghee fried cashews and raisins and apple slices also..
Delicious foxtail millet sweet pongal is ready to serve as dessert. Generous ghee makes the sweet pongal a delectable dessert. Pongal thickens with time, so adjust consistency adding water initially. I am in the phase of trying varieties of millet recipes now. I have tried thinai idli,mixed millet sathu maavu,millet ladoo so far & shared the same here.
