In a bowl, mix the sesame seeds with half the cooled syrup then place the seeds on a plate. Prepare another plate with the crushed pistachios. Using your fingers, dip the sticky dough in the pistachio plate first, then flip the cookie and dip it in the sesame seeds. The thinner the cookie is, the more crunchy it will be.

Instructions to make Original Barazik: Sesame Cookies:
  1. For the Sugar Syrup, boil the water and sugar in a sauce pan then leave over medium heat till the syrup begins to thicken. Add the lemon juice and rose water or orange-blossoms water. Set aside to cool.
  2. For the Dough, mix the butter and sugar in a bowl till soft.
  3. Add in the flour, yeast and milk, and mix till you get a dough. Let the dough rest for 15 minutes.
  4. Meanwhile, mix together the sesame seeds, melted butter and the sugar syrup. Place in a flat plate.
  5. Place the pistachios in a flat plate.
  6. Roll the dough into small balls then flatten into circular cookies.
  7. Dip one side of each cookie in the sesame mixture and the other side in the crushed pistachios, then arrange cookies in a baking tray and bake for 10 minutes.
  8. Leave to cool.

Press in a bowl of the roasted sesame seeds to coat one side. Then press the other side to coat with pistachio chunks. Gently brush one side of each cookie with egg white and dust with the crushed pistachios, then do the same on the other side with the sesame. Remove from the oven and allow to cool completely before eating. These are scrumptious and famous Syrian cookies called "Barazek" I used to eat the entire box when my mother would get some from a family owned bakery in Dam.
