Heat the remaining oil over medium-high heat in a large casserole or tagine. Add the onion and sauté for a few minutes until translucent and starting to brown. Uncover pan and fluff couscous with a fork. Top with chicken thighs and pour sauce over the chicken. Season chicken all over with salt and pepper and nestle into the onions along with the figs and pistachios.
