Meanwhile, heat the remaining oil in a small frying pan, add the fresh chopped mint and as soon as it begins to sizzle take off the heat. Stir the sugar into the pea soup, then puree with a stick blender still in the saucepan, or transfer to a liquidiser and puree in batches. Add salt and pepper to taste and stir in the remaining lettuce. Puree soup with an immersion blender or pour pea soup into a blender no more than half full.

  1. Put the Stock into a large Pan and bring to Boil - Add the Potatoes and Galic for 15 mins until Very Soft.
  2. Add Peas and simmer for 5 mins, Add rest of items apart from Sour cream then allow to Cool. Transfer into a blender or Food Processor and Blitz until as Smooth as you like.
  3. Add Half the Sour Cream and season to Taste
  4. Chill to be heated later or Serve Cold (you may need add a little more stock as it will thicken). Add the Remaining Sour Cream and Garnish with a mint leaf.

Cover and hold lid down; pulse a few times before leaving on to blend. Once the ingredients are cooked, let them cool in the saucepan. Then transfer the soup to a blender, add the mint, and blend until smooth. Finally, serve your beautiful Broccoli Pea and Mint Soup garnished with a mint leaf. Blitz in a high speed food processor or with a stick blender.
