Rather than cook my poor man's potatoes in a cup of oil, I simmered them in a quarter cup of vegetable stock, tossed in a selection of Mediterranean fruits and sprinkled them with paprika.

  7. Once potatoes begin taking on color, add half of your cooking liquid to the pan.
  8. Cook until reduced by half or completely absorbed.

With only five ingredients, this meal comes together beautifully and in no time at all.
