- Blend all the blended spices
- Heat a pan, sauteƩ the blended spice until fragrant. Afterwards, bring the roughly chopped spices in until it's cooked.
- Rinse the chicken well, place it on the banana leaves, then rub it with the cooked spices. Wrap in the leaves and let it cool in the fridge for minimum an hour (better overnight).
- Next, wrap the banana leaves with aluminium foil and steam the chicken until it's tender (mine roughly 1 hour).
Authentically, chicken betutu was cooked by smothering and filling whole chicken with seasoning. And then, the chicken was wrapped in banana leaf, put into a hole in the ground and covered by rice husk charcoal and cooked for hours. This ceremonial Balinese dish comes in two versions: the chicken-based ayam betutu, or the traditional duck version that goes under the name bebek betutu. The whole animal is rubbed and stuffed with a mixture of local spices such as turmeric, ginger, pepper, chili, and shrimp paste. In Bali, ayam betutu (or it's more upmarket cousin - bebek betutu) is a real treat.
