- Prepare 15 baby potatoes boiled
- Get 2-3 tbsp oil for potato frying

- Take 1 cup basmati rice, soaked 15 minutes
- Prepare 6 cup water
- Get 3 cardamom
- Prepare 3 cloves
- Take 1 inch cinnamon stick
- Take 3-4 black peppercorns
- Make ready 2 bay leaf
- Prepare 1 tsp oil
- Get 1 tsp salt
- Take (For Gravy):-
- Get 1 tsp Cumin seeds
- Prepare 1 Onion sliced
- Prepare 2 large tomato pure
- Prepare (For Layering):-
- Make ready leaves Fresh Coriander
- Get 1/4 cup saffron milk
- Make ready 3 tbsp Fried onion
- Make ready 1 tsp desi ghee
Instructions to make Dum Aloo Biryani:
- Firstly, boil potatoes, peel and roast baby potatoes on medium flame untill golden crisp.. prick potatoes with toothpick.
- Take a heavy bottom kadai add oil fry cumin seeds, add onion sliced fry till translucent now add tomato pure cook for few minutes. Add curd marination mix well cook for 7-8 minutes. Add boiled fried prick baby potatoes mix well in gravy covered kadai for 10 minutes.
- Take a pan heat oil add cardamoms, cloves, black pepper bay leaves, add water boil for 5-6 minutes remove cardamoms, bay leaf, cloves now add rice cook 80% drain off the rice and keep aside.
- Now sprinkle fried onions and Coriander leaves on dum aloo, add layer of half cooked rice on dum aloo.
- Top sprinkle coriander leaves, fried onions, saffron milk and desi ghee.
- Cover with aluminium foil and close lid simmer for 10-12 minutes. Finally enjoy dum aloo biryani with raita and chutney.
