The mango tree that we have in our home is of desi aam, a local mango variety which bears very small fruits and the ripe mango is not very sweet so we mostly pluck the mangoes when they are green and raw and use it for making kairi panna, pickles, and chutney.

Steps to make Raw mango chutney:
  1. In a pan take a tsp of oil. Add urrad dal+ Channa dal+cumin seeds+coriander seeds+methi seeds+red chilli+hing.Sauté for a awhile until it turns aromatic
  2. Now in a mixer jar add roasted gram + raw grated mango + step 1 ingredients and grind smooth without adding water.
  3. Now in a pan take a tsp oil + mustard seeds + urrad dal + curry leaves. Once it splutters transfer blended mixture from step 2. Add salt + jaggery + pinch turmeric and mix well. Serve this with idli/dosa/rice.

Raw green mangoes - Good firm raw mangoes makes the best sweet chutney in taste, texture as well as colour. The Launji recipe can be made either by cutting them into cubes or slice them or you can grate them. Jaggery - Powdered or whole jaggery broken into pieces, you can use either of them. Further, the color of the Mango Launji also depends of the variety of jaggery you use. Mix green raw mango chutney with curd to make a tangy dip for samosa and dahi vada.
