This easy recipe hails from Maharashtra and is our favourite, incorporating extra-thin poha (dried flattened rice), raisins, peanuts, coconut, and other yummy ingredients all quickly stir-fried till crunchy in a delicious red chilli - mustard seeds - curry leaves tempering. - Garnish with green onion and sprinkle some lemon water
- Serve with plate of salad to be hydrated
Add in the curry leaves,green chillies,asafoetida and turmeric powder,saute until the green chillies softens and wilts. Slide in the groundnuts,dalia and cashews. Saute until. *Don't mix the poha till the pani/jaggery has reached correct consistency. *Store in air tight containers for future use. * You can even use oil instead of ghee if u wish. You can use ghee plus coconut oil too. * I used the red colored (kerala style)beaten rice thin ones,you can use the regular white ones. Now add the turmeric, soaked poha and salt and mix well.
