Mat paratha is one of the most favored of current trending foods on earth. It is appreciated by millions every day. It’s simple, it’s fast, it tastes delicious. They are nice and they look wonderful. Mat paratha is something that I’ve loved my whole life.

Parathas (pan-fried Indian flatbread) are truly a treat. Crispy and flaky, they go well with most Indian dishes, whether a gravied curry or a dry stir-fry. Don't be deterred by the number of steps in this tutorial—although the process may look time-consuming, parathas are actually quick to make.

To begin with this particular recipe, we have to first prepare a few ingredients. You can have mat paratha using 6 ingredients and 5 steps. Here is how you cook that.

The ingredients needed to make Mat paratha:
  1. Prepare 2 bowls wheat flour
  2. Take 1 cup blanched palak puree
  3. Prepare 1 cup cooked tuver dal
  4. Take Salt turmeric ginger green chilli garlic pastes as per taste
  5. Take Oil and water for kneading a tight dough
  6. Get Tamara ketchup for serving

I used spinach puree to make green aata, you can use any veggie pureed for colour like pumpkin, carrot, beetroot etc. This is the best way to feed. Lay a mat on a grassy patch, soak in the fresh air, and feast on this nutritious paratha made from fresh local produce. The goodness of millet and whole wheat combined with a spicy, stuffed bean filling leaves you asking for more.

Instructions to make Mat paratha:
  1. In a big bowl take 1 bowl wheat flour add salt ginger garlic green chilli pastes Palak puree and knead the dough adding water only if required as puree already contains enough water. Cover let it rest. In an another big bowl take 1 bowl. Wheat flour add cooked mashed tuver dal (which already contains salt and turmeric) add water with caution and need a paratha consistency Dough. Cover let it rest.
  2. After 15 mins Roll out parathas from each kneaded dough seperately.
  3. Cut straight strips and put them interlocked OR weave the paratha using one stripe on another with the alternate dough strips. As shown in the pic below. It should look like a mat or chatai.
  4. Heat a skillet. Placed the weaved paratha. Flip and Cook paratha on both sides from high to low flame pouring ghee. Cover and cook for better results.
  5. Serve hot with tomato ketchup or chutneys of your choice.
