  2. In baking dish add some red sauce to just cover the bottom so the Tortillas donโ€™t stick.
  3. Make enchiladas - take tortilla shell, add some meat mixture then the cheese. in the middle of shell, Roll it up like a soft taco. (roll it kind tight) Place in paired baking dish, repeat till all tortillas and meat mixture is used. (if using refried beans heat them up in the microwave so they are easier to work with. Spread some in middle of tortillas then add meat mixture and cheese)
  4. Pour all the rest of the red sauce on all the enchiladas and cover them with cheese.
  5. Bake on 350 for 20-35 mins till cheese is melted.
  6. I like to serve mine with a salad ๐Ÿฅ—. Can serve with rice ๐Ÿš and refried beans.

Then pour any remaining sauce on top of the enchiladas and sprinkle on some extra cheese. Bake uncovered until the enchiladas are cooked through and the edges of the tortillas get slightly crispy. Top with remaining enchilada sauce and cheese. They can be prepared simply with just cheese, or be spruced up by adding a little bit of beef or chicken to appeal to the meat-eaters in your household. Enchiladas can be filled with anything you can think of!
