  1. For the dough: - Take maida/atta, add salt, milk powder, instant yeast, sugar and butter Mix well. Knead with warm milk or warm water to make a very soft dough. Keep it for an hour until the dough rise into double.
  2. For the filling: - In a pan heat oil, when hot, add mustard seeds followed by minced garlic-ginger- green chilli mix. Saute, add salt, turmeric powder,chilli powd and coriander leaves. Add boiled and mashed potatoes. Mix well. Add a few drops of lemon juice. Keep aside.
  3. Making the buns: - - Knead the dough again. Divide into equal portions. Take each portion, roll into long strips of approximately 4"× 8". Put little green chutney.Place a small portion of the masala on the top of it. Sprinkle some dry garlic chutney over masala ball.Cover the masala from the sides just like an envelope.
  4. Now roll it till you come to the centre. Make vertical cuts on the other half of the strip and continue rolling. Once done flatten it like a bun. Keep the buns for 30 mins. Milk wash them and bake at 180 degree Celsius for 30 mins.
  5. Brush some butter on each of them and sprinkle some dry garlic chutney. Serve hot with green and mithi chutney.
