- For the dough: - Take maida/atta, add salt, milk powder, instant yeast, sugar and butter Mix well. Knead with warm milk or warm water to make a very soft dough. Keep it for an hour until the dough rise into double.
- For the filling: - In a pan heat oil, when hot, add mustard seeds followed by minced garlic-ginger- green chilli mix. Saute, add salt, turmeric powder,chilli powd and coriander leaves. Add boiled and mashed potatoes. Mix well. Add a few drops of lemon juice. Keep aside.
- Making the buns: - - Knead the dough again. Divide into equal portions. Take each portion, roll into long strips of approximately 4"× 8". Put little green chutney.Place a small portion of the masala on the top of it. Sprinkle some dry garlic chutney over masala ball.Cover the masala from the sides just like an envelope.
- Now roll it till you come to the centre. Make vertical cuts on the other half of the strip and continue rolling. Once done flatten it like a bun. Keep the buns for 30 mins. Milk wash them and bake at 180 degree Celsius for 30 mins.
- Brush some butter on each of them and sprinkle some dry garlic chutney. Serve hot with green and mithi chutney.
