- Make ready 200 g cous cous quick cook instant
- Prepare 1 halloumi cheese pkt
- Get 1 tin chickpeas
- Take Mixed herbs
- Take Vegetables
- Take Button mushrooms
- Take yoghurt Greek
- Take 1 tsp chilli powder
- Get Oil to pan fry
Steps to make Simple Cous Cous Meal:
- Soak the cous cous in boiling water (sufficient to just cover the grains) and leave for five minutes
- Once all the water is absorbed, fluff through with a fork. Leave aside
- Dice halloumi cheese and pan fry until lightly golden brown on all sides. Take out of pan and leave aside
- Select what vegetables you want. I usually use onions, tomatoes, zucchini, beans and bell pepper.
- Mix the chickpeas and vegetables and pan fry until veggies are slightly wilted. Take off fire. Do the same with the mushroom
- Add the cous cous and mix through vegetable and chickpea mix. Keep the cooker to a minimum
- Add a dash of mixed herbs and toss the ingredients
- Plate up the cous cous, chickpea and veggie mix, mushrooms and have the halloumi as a side dish. Slice up a tomato and add a spoon of greek yoghurt with a dash of chilli powder
- Enjoy!
