- Heat pan and add oil. Stir fry garlic, shallots, ginger, bayleaf, star anise until aromatic.
- Pour into the pot. Add water until it covers the chicken. Pour light and dark soy sauce and wine. Cover and simmer for 30 mins. Make sure to turn the chicken after 15 mins to cook and color evenly.
Dish out the chicken quarters, chop into pieces and serve immediately with the dipping sauce.
